Tasty Stuffed Pepper Skillet

Serves: 4

 

Ingredients: 

2-medium red bell peppers, chopped

2-tsp. extra virgin olive oil

1-medium onion, diced

2-garlic cloves, minced

1/2-cup grape tomatoes, quartered

1/2-lb. lean ground turkey

2-tsp. ground chili powder, divided

2-tsp. ground cumin, divided

2-tsp. paprika, divided

1-tsp. oregano, divided

1-1/4 cups brown rice, cooked (to save time, I used the quick-cooking kind)

1/2-cup water 

2-tsp. fresh lime juice

1-cup shredded cheddar or mozzarella cheese

Salt and pepper, to taste (I use sea salt)

**optional cilantro, to garnish

 

 

Directions: 

1) Start cooking brown rice.

2) Add one teaspoon of olive oil to skillet and heat over medium heat. Once pan is hot, add ground turkey and lightly season with salt and pepper.

3) Once turkey is almost fully cooked, add the following ingredients: 1 teaspoon cumin, 1 teaspoon chili powder, 1 teaspoon paprika, and 1/2 teaspoon oregano. Mix thoroughly and finish cooking meat. When cooked, set aside on a plate.

4) Using same skillet, add other teaspoon of olive oil and add onions, red pepper, and garlic. Season with salt and pepper. After two minutes, add grape tomatoes, and other half of spices (1 teaspoon paprika, 1 teaspoon cumin, 1 teaspoon chili powder, and 1/2 teaspoon oregano) and cook veggies until are softened. 

5) Add meat, one cup of cooked brown rice, and 1/2 cup of water to the veggies and mix thoroughly. 

6) Add lime juice, mix thoroughly again, and serve immediately. Garnish with shredded cheese and cilantro, if desired. Enjoy!

I have become a huge fan of peppers, and especially LOVE stuffed peppers now. My family have been good sports and love to eat the stuffed pepper filling I've made, and sometimes eat the peppers themselves, but it's not something they love as much as I do. So when I came across a recipe for a version of stuffed peppers, but without the "stuffed" aspect, I was dying to try it! After making a few tweaks to it, I gave it a shot tonight and WHAT. A. HIT. !!! Both kids, but especially my extrememly picky eater, devoured their bowls-tomatoes and all (tomatoes are something my son especially has always REFUSED to touch). When asked if they liked it, I got, "I loved it!"-parenting win! With it also being super quick and easy to throw together, this is a definite winner and keeper in our household! I can't wait to experiment with it a bit more and maybe try some more different ingredients, and I hope you give it a try and enjoy it as much as we did! :)
