Chicken with Rice

Prep Time: 5 minutes
Cook Time: 1hr, 15 minutes
Serves: 4

Ingredients: 

1.5lbs-chicken (breasts, thighs or legs-I use boneless/skinless thighs)

1-package of Uncle Ben's long-grain wild rice

1-small bag of baby carrots

2-cups water

Directions: 

1) Preheat the oven to 400.

2) Combine water, rice, and spice packet in bottom of a 9x13 casserole dish.

3) Place chicken over rice, and then add carrots. 

4) Cover dish with foil and bake at 400 degrees for roughly 60 minutes, or until chicken is almost done. 5) Uncover and bake for another 10-15 minutes. Serve and enjoy!

This is a popular dish within our family, and the kids especially love it! So quick and easy to throw together, makes two meals, and family approved? What could be better?!
