Egg Muffins

Container Counts: 1 Red, 1/2 Green, 1/2 Blue

Prep Time: 10 minutes
Cook Time: 15-20 minutes

Makes: 12 muffins

Serving Size: 2 muffins 

 

Ingredients: 

-12 Eggs 

3-cups veggies of your choice (peppers, tomatoes, spinach, kale, mushrooms, onion) 

1/2-tsp. sea salt 

1/4-tsp. garlic powder 

1/4-tsp. pepper 

1/2-cup feta cheese or shredded cheddar 

-Pam or muffin paper liners (I've used both, and have found paper liners to be most successful)

 

 

 

 

 

 

 

 

 

 

Directions: 

1) Preheat oven to 350°.

2) In a large bowl, beat eggs. Add veggies, salt, garlic powder and pepper. Stir in cheese.

3) Spoon by 1/3 cupfuls into muffin cups coated with Pam or lined with muffin paper.

4) Bake 15-20 minutes or until a knife inserted near the center comes out clean.

I'll admit, I was a bit hesitant to try these because of all the spinach. Spinach is yet another healthy food that has really grown on me these past two months. After one bit, I was sold! These are so delicious, so jam packed with veggies and protein, and with two in a serving, a filling snack to have. A fix snack must for me!
