Apple Crisp
Prep Time: 15-20 minutes
Cook Time: 2 hrs on HIGH, or 3 hrs on LOW
Serves: 5-6
Ingredients For Apples:
7-Granny Smith apples, cored, peeled, and sliced into slices that 1/4 inch thick
1/2-cup light brown sugar, packed
2-tbsp. sugar
2-tsp. ground cinnamon
1/4-tsp. ground nutmeg
1/4-tsp. salt

Ingredients For Topping:
1-cup oats, Old Fashioned style
3/4-cup whole wheat flour (I use King Arthur's brand)
1/4-cup light brown sugar, packed
1-tsp. ground cinnamon
1/4-tsp. salt
1/2-cup unsalted butter, cut up into cubes

Directions:
1) In a large bowl, combine peeled and sliced apples, brown sugar, sugar, cinnamon, nutmeg, and salt. Stir until combined, then transfer to your crock pot.
2) To make the topping, in a separate bowl, combine the oats, whole wheat flour, brown sugar, cinnamon, and salt. Mix until well combined.
3) Add butter cubes to the oat mixture. Using your hands, mix the butter into the mixture until everything starts to clump together (this may take a few minutes).
4) Give apple mixture (in crock) one last stir, making sure apples are evenly spread. Taking oat mixture, evenly spread on top of apples.
5) Cover and cook on high for 2 hours, or low for 3 hours. Once done, remove from crock and let stand for 30 minutes before serving. If desired, serve with french vanilla ice cream.
With fall here, I've been in the mood for making some fall favorite recipes! However, I wanted a healthier spin, and came across just that of a classic apple crisp-and it's still SO delicious! The whole family enjoyed eating it, and leftovers I just put into a glass bowl and stored in the refrigerator. When ready for some, simply pull out and heat up in the microwave until warmed through. Hope you enjoy this one as much as we have!!
