Chicken With Balsamic Peach Glaze

Prep Time: 10 minutes
Cook Time: 3.5-5 hours

Serving Size: 1 chicken thigh

 

Ingredients: 

1-small yellow onion, diced

3/4-cup balsamic vinegar

1/4-cup agave nectar (can use honey, too)

1-large can sliced peaches, sugar-free (can use light)

1-tsp. dried rosemary (1 tbsp. if fresh)

salt and pepper, to taste (I use sea salt)

10-boneless, skinless chicken thighs

Minute rice (optional)

 

Directions: 

1) Place chicken in the bottom of the crock pot. If all 10 thighs don't fit in single layer in bottom of crock, then place two of smallest ones towards middle on top of bottom layer.

2) Add all other ingredients on top of chicken. Cover and cook for 3.5-4 hours on low, 5 hours if chicken is frozen.

3) Once cooked, drain the liquid off chicken into a medium saucepan and discard peach slices. Bring to a boil, then reduce heat and simmer until sauce thickens. 

4) Serve chicken on a bed of rice (optional) with thickened sauce spooned over it.

I'll admit, this recipe sounded a little unusual to me at first-I'm not usually a fruit mixed with "real" foods kinda person. However, my kids have an serious LOVE for peaches and anything peach, so I considered this might be a real shot at being a successful dinner with them. Boy, was I right! Once my oldest heard there were peaches in the dinner, we didn't have to fight him to try a bite. My youngest, the biggest peach lover in our crew, ate it up within minutes. Feeling quite glad I kept an open mind to this recipe, which is mommy approved not just because it was a success, but because it's also "fix" friendly. Best of both worlds! :)

*Note: I chose to add the rice element to make it more appealing for the family. It seemed to add another element other than just eating chicken, and the rice absorbed the peach juice, which made it really yummy, too.
