Oatmeal Chocolate Chip Cookies

Cook Time: 14-15 minutes
Makes: 8-10 cookies
Serving Size: 2 cookies
Ingredients:
1-cup old fashioned rolled oats
1-tsp ground cinnamon
1/4-tsp sea salt
2-medium ripe bananas, mashed with a fork
1/4-cup semi-sweet chocolate chips
Directions:
1) Preheat oven to 350°.
2) Lightly spay baking sheet with non-stick cooking spray (I instead line the sheet with parchment paper).
3) Combine oats, cinnamon, and salt in a medium bowl and mix together well.
4) Add in mashed bananas and chocolate chips, and mix thoroughly.
5) Drop by heaping tablespoonful onto your prepared baking sheet.
6) Flatten the cookies either by wetting the bottom of a small juice glass or by using a silicone spatula.
7) Bake for 14-15 minutes, or until cookies are firm.
8) Let cookies cool thoroughly before placing into airtight container and store in fridge.
These cookies are great for when that sweet tooth kicks in! Easy to put together, and you get to have two in a serving, which for me allows me to feel extra great getting to snag more than one and knowing I'm not cheating. Also, only having 8 to the batch is great in that they're not hanging around too long, tempting me! I store them in a container in the fridge to keep them fresh longer. Hope you enjoy!
