Flatbread Pizza

Serving Size: 1 flatbread
Ingredients:
-1 tsp. EVOO
-Baby spinach
-Cherry tomatoes
-Fat-free feta cheese (I've also used goat cheese in past, both are great!)
-Cooked chicken or turkey breast (I use Perdue's Short Cuts if I don't have some leftovers on hand), cut into small bite-sized cubes
-multigrain flatbread (I like Flatout brand)
Directions:
1) Preheat oven to 375 degrees.
2) Place flatbread on a an oven-safe pan, or pizza stone if you have one, and lightly brush top side with EVOO with pastry brush.
3) Cover surface with spinach, chicken, feta cheese, and tomatoes to your liking, leaving a half-inch am order around outside.
4) Place sheet in oven and cook for 8-10 minutes.
When starting out my first round of the 21 day fix, I was looking for yummy sounding lunches to try, and this one not only looked that, but also looked filling. It's one of my go-to recipes, that is not only great brushed with olive oil and baked, but to have it quickly on-the-go, I've also skipped the olive oil and baking and just put it together as a wrap-great either way (if you're not cooking it and asseming just as a wrap, there's no spoon counted in the container count). A very quick and delicious lunch!.
