Buffalo ANYTHING is a huge hit and a MUST in our house for my husband and me. Football season usually consists of healthy baked chicken wings or buffalo chicken dip, and I'm always on the lookout for new buffalo recipes to try! When I saw that there was a 21 day fix APPROVED recipe for buffalo bites, I was on it (and the hubby was pretty excited, too!). I'll admit, they do take a little while to prep because I like to make a double batch so that we have some leftovers to have for lunch, but I find the more I make the recipe (I cycle it into our meal plan frequently), the quicker the prep is because I've got the drill down. Believe me, it's WORTH the time-SO sinfully good that you think there's no possible way this could be clean eating food! :D Whether you make them year round or as a delicious treat for a party or sports event, this recipe is a definite must have!!! Buffalo Chicken Bites
Container Counts: 1-1/4 Red, 1/2 Yellow, 1 tsp
Prep Time: 20 minutes
Cook Time: 20-25 minutes
Serves: 2 (1-1/4 red containers; chicken breast size varies)
Ingredients:
-2 boneless, skinless chicken breasts, cut into bite-sized pieces
-½ cup flour
-1 egg
-1 tbsp butter, melted (I used unsalted)
-¾ cup Frank’s Red Hot Sauce
-1 tsp garlic powder
-½ tsp cayenne pepper
-½ tsp salt
-poultry seasoning, to taste
Directions:
1) Preheat the oven to 400.
2) On a plate, crack the egg and whisk. In another plate, add the flour and season with garlic powder, cayenne, and salt.
3) Season the chicken pieces with poultry seasoning, and then dip the chicken in the egg to coat. Next, dredge the chicken in the flour and place coated chicken pieces on a baking sheet sprayed with cooking spray (to save time and because I doubled the recipe, after I coated the chicken in egg, I put it into a large ziplock bag and added flour mixture to bag and shook it all to coat. I then used tongs to pull chicken out and put onto a non-stick foil lined baking sheet.)
4) Spray the chicken with cooking spray to ensure it browns when baking. Bake the chicken pieces for 10-15 minutes, and then flip and cook the other side for another 10-15 minutes, or until golden brown.
5) Stir the melted butter and hot sauce together in small pan over low heat, just to get sauce warm. Dip the baked chicken in the hot sauce mixture until fully coated. Serve and enjoy!
