Lasagna Roll-Ups

Container Counts: 1 Yellow, 1 Green, 1 Blue

Cook Time: 40 minutes
Serves: 4-5 (2 roll-ups = 1 serving)

 

Ingredients: 

1-10oz package frozen chopped spinach, thawed and drained

32-oz tomato sauce (I used my homemade fix sauce, see recipe "21 Day Fix Sauce")

1-15oz fat free or light ricotta cheese

1/2-cup Parmesan cheese, grated

9-tbsp. part-skim, shredded mozzarella cheese

1-egg

1/2-tsp. minced garlic

1/2-tsp. dried Italian seasonings

Salt and pepper, to taste

9-lasagna noodles (I use whole wheat or whole grain), cooked

Directions: 

1) Preheat oven to 350 degrees. 

2) Make sure the spinach is drained well. In a bowl, combine the spinach, ricotta and Parmesan cheese, egg, minced garlic, dried Italian seasonings, and salt and pepper.

3) Line the bottom of a 9x13 dish with about one cup of the tomato sauce.

4) Lay a sheet of wax paper on the counter next to you and lay out the cooked lasagna noodles, making sure that the noodles are dry.

5) Measure out about 1/3 cup of the ricotta mixture and spread evenly over each noodle. 

6) Roll each noodle carefully and place (seam side down) into the baking dish. Repeat with each noodle. 

7) Ladle the remaining tomato sauce over the top of the roll-ups, and top each roll-up with 1 tablespoon of the shredded mozzarella cheese.

8) Cover dish with aluminum foil and bake for 40 minutes, or until cheese is melted and bubbly. Enjoy!

I won't lie, I was a little nervous to try this recipe at first because of the frozen spinach. Spinach is something I never really liked up until recently, and even at that, I only like fresh spinach. Frozen spinach is something that's always been a huge turn-off to me visually, and yes, it has to get past my eyes before it gets past my mouth. However, in the spirit of turning over a new leaf, I gave it a go and was actually pleasantly surprised at how well they turned out. For me (and the rest of the family agreed), I will experiment and maybe just use 5 oz of the frozen spinach in the future and see how that goes, but overall it was a delicious and healthy version of lasagna that I could definitely get used to! It being "Fix" friendly was just an added bonus, and LOVED that I could combine this with the Fixate 21 Day Fix pasta sauce (something I keep in frozen batches in the freezer for the convenience of being able to use it for multi-purposes).
