Summer must be coming...
My sister-in-law was in town visiting, and like me, she's a big Pinterest enthusiast. So while catching up, the conversation turned to recently tried and liked healthy recipes, and this was one of the ones she recommended to me. With summer coming, and our home-situation a bit (a lot) more settled than it was last year with trying to move and totally reform the new house while dealing with a young puppy-I'm looking forward to putting the grill to some serious work this summer. Not having been able to use the grill as much as we would've liked due to regulations in the past, I'm still fairly new to grilling methods and recipes and am on search for some great ones! I love greek salads, and have never heard of tzatziki before, so figured this recipe sounded like a good one to try.
Not only was it pretty easy to throw together, but it was also wonderfully delicious, AND the tzatziki made enough sauce that I've been able to use the leftovers as a dip to go with my fresh cut veggies for snack.
A bit of a warning though-whereas I love cucumbers so it didn't really bother me, the tzatziki (obviously being primarily made up of blended cucumbers) does have a strong cucumber taste. So if you're one that dislikes cukes, you most likely won't like the dip...my brave husband (normally not a cucumber fan at all) got up the nerve to try it, but wasn't a fan at all, which is ok--it leaves more dip for ME! As long as you have A cucumber lover in the house, it's worth a shot to try because you never know, it might be a new leaf that you turn over that day, discovering you like it.
